Dextroslim
Dextroslim is a well established water soluble speciality carbohydrate that offers a wide range of benefits. It has been clinically proven to be a soluble fibre; it has formal approval as a fibre in Argentina, Australia, Belgium, Brazil, China, Finland, France, Indonesia, Japan, Korea, Malaysia, Mexico, New Zealand, Norway, Philippines, Poland, Singapore, Taiwan, Vietnam and USA.
Dextroslim is completely stable in soft drinks at a wide range of pH and temperatures 4g/100g would be required for a “good source of fibre” and 7g/100g for a “high fibre” content.
We can also supply a special grade of Dextroslim which does not affect the colour or flavour of the drink at all – allowing for the addition of high in fibre near water.
Finally, it has also been demonstrated that Dextroslim has a prebiotic effect at 4g/day.
Dextroslim
Dextroslim (polydextrose) is a well established water soluble speciality carbohydrate that offers a wide range of physiological and functional (technical) benefits.
Dextroslim is a polysaccharide composed of randomly cross-linked glucose with all types of glucosidic bonds containing minor amounts of bound sorbitol and acid. The production of Dextroslim includes additional processing to reduce acidity and bitterness, thereby improving the flavour profile.
A Multi-Functional ingredient
It is the complexity and structure of Dextroslim that leads to many of its functional properties.
This water soluble speciality carbohydrate provides a lower caloric value (1 kcal/g) due to the way it is digested in the body: Dextroslim cannot be hydrolysed by our body’s enzymes, making it an excellent bulking ingredient in calorie reduced foods.
Although not hydrolysed by our body, it is partially fermented by intestinal micro-organisms that produce volatile fatty acids which are absorbed and utilised by the body. Therefore, Dextroslim is digested as a Prebiotic dietary fibre .
Again due to its structure, Dextroslim is used as a partial fat replacer by increasing viscosity and improving the mouthfeel.
Another important characteristic is its neutral flavour and non sweet properties, allowing it to be used as fibre, low calorie bulk ingredient, in both sweet and savoury applications.
Stability
Dextroslim is very stable to heat in both solution and powder forms. Trials made at typical cooking / heating conditions used in food processes show that gross changes begin to take place above 260 oC.
Other Technical Properties
Moisture Management – Humectant: Dextroslim has a slightly greater effect in lowering water activity than sucrose, which is even more noticeable at higher concentrations. Therefore, it is used as a humectant in foods to slow down undesirable changes in moisture. Dextroslim helps to retain moisture, texture and shelf-life in a range of applications – from confectionery and bakery to meat products.
Solubility: over 80% w/w solution in water – an important property for mouthfeel, flavour release and texture.
Crystallization:
- Dextroslim is a mix of molecules with varying molecular weight, so it does not crystallize. It is used to prevent crystallization of other sugars and polyols.
- Dextroslim also has a higher glass transition temperature, which helps to protect the structure of frozen and thawed products by interrupting sugar recrystallization and starch retrogradation.
Freezing point depression: when compared to other carbohydrates, Dextroslim has the least effect on freezing point depression.
Heat of solution: Dextroslim has a positive heat of solution.
Other Physiological Properties
Glycaemic Index: Dextroslim polydextrose is non glycaemic, with a glycaemic index of 7
Suitable for diabetics: Dextroslim is metabolised independently of insulin and has little effect on plasma glucose and insulin levels. Its suitable for both diabetic and carbohydrate control diets.
Prebiotic: According to the latest definition, Dextroslim is an effective prebiotic with a sustained effect throughout the colon
Non-Cariogenic: Dextroslim is not fermented in the mouth; it does not promote dental caries.
Toleration: Toleration is often an issue in specialty carbohydrates due to osmotic and fermentation effects. Because of its large structure, Dextroslim’s osmotic effect is minimal and, as it is slowly fermented throughout the colon, fermentation effects are also reduced. Therefore, Dextroslim is very well tolerated. The World Health Organisation concluded that polydextrose has a mean laxation threshold of 90g/day or 50 g in a single dose.

Nutritional Analysis for Foods Containing Dextroslim
The normal AOAC method for detecting fibre does not detect polydextrose so when a product containing Dextroslim is sent to an analytical laboratory for nutritional analysis it is essential that the laboratory is instructed to test for Dextroslim (polydextrose) using AOAC method 2000-11. The laboratory should be instructed that the calorific value of polydextrose is 1.0 kcal/g.

Dextroslim is compatible with all food ingredients and used in a wide variety of applications, allowing a number of nutritional improvements, such as fibre fortification, calorie reduction, reduced glycaemic load, sugar and fat reduction, etc.
Applications include savoury and sweet products.
